Appetizer

Sweet Potato Crostini with Blue Cheese and Honey

Serves: 10-15 People

Ingredients:

  • 4 sweet potatoes

  • 2 tbsp. extra virgin olive oil

  • salt and pepper

  • 1/2 lb blue cheese

  • 1 cup walnuts

  • 3 tbsp. fresh rosemary

  • 1/2 cup honey

Prep: 2 hours, 25 minutes

  1. Preheat oven to 250 degrees. Line 2-3 baking sheets with parchment paper

  2. Slice sweet potatoes into 1/8 inch rounds. In a large bowl, toss together sweet potatoes and olive oil to coat. Arrange potato slices in a single layer on baking sheets. Season generously with salt and pepper

  3. Bake for 1 hour, then flip the slices and bake until crispy and golden brown (about 1 more hour). Rotate sheets halfway through cooking.

  4. Remove and let cool.

  5. Toast walnuts in a pan until golden brown.

Right before people arrive:

  1. Top sweet potato slices with blue cheese crumbles, toasted walnuts and rosemary. Drizzle with honey, sprinkle with salt.


Veggie Dish

Lu’s Sweet Peas with Parmesan & Lemon

Serves: 10 - 15 People

Ingredients:

  • 2 tsp. Lemon Zest

  • 2 tbsp. extra virgin olive oil

  • 2 lbs fresh peas

  • 1/2 cup water

  • 1/2 cup grated Parmesan

  • 1/2 tsp. kosher salt

  • 1/2 tsp. fresh ground pepper

Right Before Dinner: 10 Minutes

  1. Heat oil until it simmers - 2 minutes

  2. Add the peas and stir to coat

  3. Add the water and bring to a boil

  4. Cover and cook until peas are heater through - 2-3 minutes

  5. Stir in parmesan, lemon zest, salt and pepper

  6. Serve.


Main Course

Dad’s Honey & Brown Sugar Ham Glaze

Serves: 10 - 15 people

Ingredients:

  • 1 fully cooked sliced ham

  • 1 tbsp. whole cloves

  • 1 cup pineapple juice

  • 1 cup brown sugar

  • 1/2 cup honey

  • 2 oranges, juiced

Prep: 25 minutes

  1. In a saucepan, combine the pineapple juice, brown sugar, honey and orange juice.

  2. Stir and simmer over medium, low heat until slightly thickened, about 20 minutes.

  3. Set aside until 1 hour before dinner.

Before Dinner: 1 Hour

  1. Preheat Oven to 350 degrees

  2. Pour glaze over the hame

  3. Bake ham, uncovered for 1 hour in oven with the glaze

  4. Serve.


Dessert

Mom’s Locally Famous Berry Pie

Serves: 6-8 People

Ingredients:

  • 1 9-inch pie crust

  • 2 tbsp. tapioca

  • 3/4 cup sugar

  • 1/4 tsp. salt

  • 3 cups rasberries

  • 3 cups blackberries

  • 2 tbsp. unsalted butter

Cook & Prep Time: 1 hour & 20 minutes

  1. Preheat oven to 425 degrees.

  2. Roll out pie crust for bottom crust and place in pie pan

  3. Roll out pastry for top crust and set aside

  4. In a large bowl, stir together the tapioca, sugar and salt. Add berries and toss (mix well)

  5. Pour berry mixture into pan and add small quarter size cubes of butter around the top

  6. Slice the top crust into stripes and wear to form your design

  7. Bake for 25 minutes, then reduce heat to 350 degrees.

  8. Bake until juices are bubble and crust is brown - 35 minutes
